Bok Choi with Gingery Butter  (Farmer John’s Cookbook)
 
            1-2 medium bok choi, chopped into 1 inch pieces
            6 Tbsp. butter
            2 Tbsp. tamari or soy sauce
            1 Tbsp. grated or finely chopped ginger
            1 clove garlic, minced
            1 Tbsp. cilantro, chopped (optional)
            Salt and pepper
 
Bring large pot of water to a boil, add the choi; cook until tender, but still slightly crisp. Drain, and rinse with cold water.
Melt butter in skillet over medium heat. Add soy sauce, ginger, garlic, and choi, stirring constantly until the choi is completely coated, and heated through.
Remove from heat, stir in cilantro; season with salt and pepper to taste. Serve warm.
