Thai Cucumber Salad

Salad:
2 large cucumbers 
1 red onion, finely chopped 
1 jalapeno pepper, finely chopped 
1 cup unsalted, roasted or raw, shelled peanuts 

Dressing: 
3 Tbs lemon juice 
1 Tbs tamari or soy sauce 
1 Tbs sugar, honey or agave syrup 
1/2 cup dried fruit such as raspberries, raisins, cranberries
(optional, and not in original recipe)

Directions: 
Slice the cucumbers in half lengthwise and scoop out and discard the seeds
Cut the cucumber halves into 1/4" half-moon slices
Combine cucumber slices, red onion, and jalapeno pepper in a bowl
Mix all dressing ingredients in a small bowl
Pour dressing over cucumber slices, onions and peppers and mix well
Chill salad for 20-30 minutes 
Add peanuts just before serving to prevent them from getting soggy
Unless honey is used, this recipe is vegan. 

I have spiffed up this salad by adding dried cranberries, raisins, and/or raspberries.
