Bok Choy and Scallion Soup

Really easy 
almost instant soup
with the bok choy and scallions

Time: about 10 minutes
 

Ingredients:
2 cups filtered water
2 cups chicken broth (we used a 16-oz package of organic, free range, low sodium chicken broth from the Honest Weight Food Co-op)
2 packages Ramen Noodle Soup
1 share bok choy
1 share scallions
 
Wash the bok choy and scallions.  Separate the bok choy leaves. Chop the scallions into little circles.
 
Put the water, chicken broth, Ramen noodles, bok choy and scallions in a medium size pot. Bring to a boil. Stir occasionally. Add only one of the Ramen Noodle Soup spice packets, if desired.
 
When the noodles are done, the soup is ready to eat!
