Friday June 15, 2007 Greetings CSA Members, Brian is out of the hospital and making a very speedy recovery. In fact, it is hard to keep him sitting still! I want to thank you all so much for your very kind words, thoughts, and prayers. Your support, dinners, flowers, cards, and emails were very important to us and very much appreciated. Thank you. This week we are seeing lots of weeds as well as wonderful vegetables out in the fields! In your share, you will see some very familiar and some not-so-familiar veggies. Some of you will receive swiss chard. I especially love to slice it up and stir-fry it along with onions and garlic until it is wilted. Then I put the chard/onion mix into a casserole dish, cover with grated Swiss cheese and top with eggs and milk beaten together. This soufflé dish was a huge success with my children when they were little. Also in your share this week, you will find celeriac. This knobby, rather ugly vegetable is the most versatile veggie we grow. Of course it has to be cleaned up, the outside either peeled or cut off. But once it is cleaned up, slice it for roasting with other root crops, mash it with potatoes, grate it raw into your green salad, use in cole slaw instead of cabbage, or chop it up finely in your food processor to create a wonderful soup stock. Members picking up at the Troy and Saratoga Farmers’ Markets, please remember to come early so that you have the best choice available. Please remember that if you are unable to pick up your share, ask a friend or neighbor to help you out.
