Corn and Swiss Chard Sauté
 
1 tbsp. butter
2 tbsp. olive oil
1 small red onion, diced
1 small red bell pepper, diced
1 stalk celery, diced
4 ears of corn, kernels removed from the cob
1 head Swiss chard, chopped
1/2  tsp. sweet paprika
Coarse salt and freshly cracked black pepper, to taste
2 cloves garlic, chopped
 
Add oil and butter in a large skillet over medium high heat.
Add red onion, peppers, celery, corn and Swiss chard to skillet, Sauté veggies for 5 minutes to soften.  Season with salt and pepper and paprika. Add the garlic and sauté for 1 minute or just until soft and golden.
Reduce to medium heat. If pan looks dry, add 1 to 2 tbls. water. Cook until corn softens and veggies are tender, about 3 to 5 minutes.
